AZUMATSURU Brewery
Our brewery was established in the late Edo period.
Surrounded by the mountains of the city of Taku in Saga Prefecture, we have been making sake that has been loved by the local community for generations. After closing down in 1989, the brewery was reopened in 2009 when the owner took over as toji (master brewer), and the brewery is now run by the whole family, who work hard at making sake every day.
The water used in the brewing process is high-quality soft water with a soft, refreshing flavor that is derived from the underground water that flows from the mountains of Taku. We use both old tools that have been lying dormant in the brewery and modern tools in the brewing process.
While valuing the bonds of family and sublimating the thoughts of our predecessors, we will continue to brew “sake that lets you see the face of the brewer”.
