NARUTAKI Brewery

“300 years of love for our hometown” If you trace back to our predecessor, we have been a local sake brewery in Karatsu for over three centuries. Karatsu is a tourist city located in northern Kyushu, blessed with rich nature, seafood, and history and culture. We want to introduce our local sake to the world as one of the local cultures we can be proud of.

Karatsu is a castle town that has been recording its history since ancient times, blessed with an abundance of seafood and a mild climate. Our company was established in 1974 through a merger of three sake breweries, centered around Taiko Shuzo, which has been brewing sake in this area since 1705. When we built our new brewery, we were extremely particular about the water. After analyzing the water obtained from more than a dozen test excavations, the current location was chosen because it was the site where the legend of how Toyotomi Hideyoshi had Sen no Rikyu make tea using water that gushed forth from the base of a cedar tree, and where the successive lords of the Karatsu domain had used spring water for tea ceremonies.

With the desire to “perform ideal rice polishing with our own hands”, our company is still performing in-house rice polishing, mainly for high-polished rice used in the brewing of specific-name sake. We would like to pass on to future generations as much as possible the tradition of “sake breweries performing their own rice polishing”, which is decreasing year by year due to changes in the efficiency of sake brewing and the working environment.
