MITSUTAKE Brewery
The brewery was established in 1688, and has a long history. It is also known as the Koumutei School in Saga Prefecture, as it has produced many toji (master brewers).
The brewery also focuses on ginjo-style sake production, and has won numerous awards at sake competitions. In recent years, it has won a gold medal at the International Wine Challenge (IWC), which is regarded as the world's most authoritative competition, and has also received high praise at many other overseas competitions.
The rice used in our company is mainly high-quality sake rice produced by exclusive farmers in Saga Prefecture, but in recent years, in order to meet the diversification of food, we have been using sake rice suitable for brewing sake from all over the country to enable us to express a variety of flavors.
All the water used at our brewery is high-quality underground water from the Tarayama mountain range. We have our own well on the premises, and we use this high-quality water under thorough quality control, from washing the rice to adding water, so we can be particular about the water we use in our sake brewing.
