YAMATO Brewery

In Saga Prefecture, where it is said that rice cultivation technology was first introduced to Japan, Yamato produces sake and shochu.
The roots of the company can be traced back to five long-established breweries.
We have continued to refine the heart and skill of sake brewing, inheriting the history and traditions cultivated by the five lineages.

Yamato's sake is made using locally-grown sake rice, which is nurtured by the mild climate and fertile soil of Saga Prefecture. Saga Prefecture, which has one of the largest rice-growing areas in Japan, with its vast Saga Plain, has a wide variety of sake rice, and is able to make full use of the benefits of its local environment.
The main sake rice varieties used by Yamato in this blessed environment include Yamadanishiki, Saganohana and Reiho. The highest performance is brought out by carefully polishing the high-quality rice harvested locally.

Seiburi is the highest peak on the border between Saga and Fukuoka prefectures. It is said that the Yamataikoku kingdom, led by Himiko, once existed at the southern foot of Seiburi. The clear underground water from the Seiburi mountain range is pumped up from 200m underground and used as the brewing water for Yamato sake.

As the fact that the current Yamato area was a sake brewing test site in Saga Prefecture until 1975 shows, the quality of the water used as brewing water is the best in Saga, and this blessing is the source of the “mild taste” and “deep flavor”.
